Gluten-Free Orzo with Chicken Recipe – A Complete and Nutritious Meal That’s Easy to Prepare

Ingredients (4 servings)
- 2 chicken breasts, cut into pieces
- 1 cup gluten-free orzo
- 1 onion, chopped
- 2 carrots, diced
- 1 head of broccoli, cut into small florets
- 2 cloves garlic, chopped
- 2 cups chicken broth
- 1/2 cup sundried tomatoes, chopped
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1 teaspoon dried oregano
- A touch of fleur de sel and pepper to taste
- Juice of one lemon
- 2 tablespoons fresh dill, chopped
Preparing the one-pot orzo and chicken
- Slice the onion, chop the garlic, cut the carrots and broccoli into small pieces.
- In a large cast iron skillet, heat the olive oil over medium heat.
- Add the chicken pieces, season with paprika, oregano, salt and pepper.
- Brown for about 5 minutes until golden brown. Remove and set aside.
- In the same pan, add the onion and garlic. Sauté for 2 minutes.
- Add the carrots and cook for 3 more minutes.
- Stir in the gluten-free orzo and mix well to infuse with the flavors.
- Pour in the chicken broth and add the sundried tomatoes. Bring to a boil.
- Reduce heat and simmer, covered, for 10 minutes, stirring occasionally.
- Add the reserved chicken pieces and broccoli. Continue cooking for 5 minutes, until the orzo is tender. gluten-free is tender and the broth is absorbed.
- Drizzle with lemon juice and sprinkle with fresh dill before serving.
