INGREDIENTS: for 4 people
- 10 tbsp olive oil
- 6 tsp date sugar
- 6 raspberries
- 4 tsp vinegar
- 2 pinches of salt
PREPARATION :
- Crush the raspberries.
- Mix everything together.
- Add the olive oil.
- Serve.
TIPS: When making a date sugar vinaigrette, one of the tricks to know is not to add the olive oil first. Indeed, it's the vinegar that will allow the date sugar to properly dilute, resulting in a perfectly smooth vinaigrette.

INGREDIENTS: for 4 people
- 4 passion fruits
- 3 tbsp olive oil
- 1 pinch of salt
- 1 pinch of pepper
- 1/2 tsp powdered sugar
PREPARATION :
- In your bowl, put the pulp of your passion fruits.
- Add a pinch of salt, a pinch of pepper, a pinch of sugar.
- Mix everything together and pour in the 3 tablespoons of olive oil.
- Emulsify lightly.
- Serve.
Greek Yogurt and Dijon Mustard Dressing
INGREDIENTS: for 4 people
- 125 ml (1/2 cup) 0% fat plain Greek yogurt
- 60 ml (1/4 cup) of milk
- 15 ml (1 tbsp) Dijon mustard
- 30 ml (2 tbsp) lemon juice
- 15 ml (1 tbsp) date sugar
- 15 ml (1 tbsp) chopped parsley
- 15 ml (1 tbsp) chopped chives
- 10 ml (2 tsp) chopped garlic
- 2.5 ml (1/2 tsp) onion powder
PREPARATION :
- In a bowl, whisk the Greek yogurt with the milk and Dijon mustard.
- Stir in the remaining ingredients.
- Keep refrigerated (this vinaigrette will keep for 2 to 3 days in the refrigerator).
- Salt and pepper to taste.
- Serve.
Zaatar Vinaigrette
INGREDIENTS: For 1 half jar of jam
- 7 tbsp olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp Zaatar
- 1 tbsp date sugar
- 1 preserved lemon
- A little salt
- Pepper from the mill
PREPARATION :
- Cut the preserved lemon in half, remove the seeds and place the lemon halves in the bowl of a small food processor.
- Add the remaining ingredients and mix.
- Taste and adjust the seasoning if necessary.
- Pour into a jam jar and keep cool.
NOTE: We suggest serving it with a tomato and cucumber salad
Strong mustard and white balsamic vinegar vinaigrette
INGREDIENTS: for 4 people
- 1 tsp strong mustard
- 10 cl of white balsamic vinegar
- 1 pinch of turmeric
- 1 tsp date sugar
- 20 cl of olive oil
- Pepper from the mill
PREPARATION :
- Mix the mustard, vinegar, turmeric, and honey in a bowl. The salt is already present in the mustard; no need to add any more.
- Whisk the vinaigrette while gradually drizzling in the olive oil.
- Add pepper to taste.
- Use immediately on your lamb's lettuce or arugula salad.
